King Oyster Scallops

King Oyster Scallops & Garlic Sauce

Look no further.  This recipe takes the crown for best taste and texture.  Wow, are these mushroom scallops delicious!

Serves 2 to 4

Ingredients:

Marinade

1 cup vegetable broth, HOT!

2 tbsp white miso paste

1 tbsp soy sauce

1 tbsp olive oil

1 tsp liquid smoke

Pinch of garlic powder

Pinch of onion powder

Mushrooms

6 large King Oyster Mushrooms sliced 1 inch thick

1 tbsp Ghee or olive oil

Butter to taste

Garlic Sauce

2 tbsp butter

2 cloves of minced garlic

1/4 cup lemon juice

Salt & pepper to taste

Begin by preparing the king oyster mushrooms.  Cut off the woody end of the mushrooms and slice the remainder of the stems into 1 inch sections.  The caps can be prepared in the same way, they just won't look like scallops when done.  Heat the vegetable broth until hot, remove from the stove and pour into a glass dish that has a lid. Add the remaining marinade ingredients to the hot broth and stir to dissolve.  Once thoroughly mixed, add the mushrooms and let them marinate for 30 min to 2 days.  If you're going for a longer soaking time, put them in the fridge once cool.  Overnight marinating yields great results.

Take marinating mushrooms out of the refrigerator and let them warm up to room temperature.  This will allow them to cook more evenly.  Melt 1 tbsp of ghee or olive oil in a large skillet on medium-high heat.  Use cast iron if you have it!  Cook the mushrooms on the flat sides for 6 to 8 minutes on each side until well done.  Add a little butter in the final 2 minutes for a flavor boost. 

Start preparing the lemon garlic sauce.  Melt 2 tbsp butter in a small fry pan.  Add garlic and cook on medium heat for 1 or 2 minutes.  Remove from the heat and add lemon juice, salt, and pepper.

Pour the garlic lemon sauce on top of the king oyster scallops and enjoy the goodness!  They are a great standalone appetizer, but also work perfectly as a scallop replacement in your favorite seafood dish.  Try making some creamy pasta and toss in the scallops.  Top them with Parmesan cheese for added bliss.
